This is one of my clients, Elias Wicked Ales from The Philippines. The owner Raoul hired me three summers in a row to help them clean up their process and teach their staff how to make world class beers. It took a lot of hard work and sweat to get it right, but we improved every year.

In 2023, the brewey was named "Champion Beer of Asia" at the Asia Beer Championships in Ho Chi Minh City, Vietnam

In 2024, the brewery was named "Champion Brewery of the Philippines" and "Champion Small-Sized Brewery of Asia" at the Asia Beer Championships in Singapore. They earned a total of 4 gold, 1 silver, and 4 bronze medals in beer, as well as a gold and bronze in cider.

In 2022, the brewery was named "Champion Brewery of the Philippines" at the Asia Beer Championships in Bangkok, Thailand, earning a bronze medal and 3 Chairman Selections.

In 2023, we are again recognized as "Champion Brewery of the Philippines" at the same competition, winning a gold medal and a bronze.

My Journey

I love traveling the world teaching people how to be better brewers and better humans. I believe that it takes a positive mindset and conscious intent to make great beer consistently. And I seek to instill those same values in whomever I train.

I have experience in every side of making beer from wort production to packaging. I also have some experience in ciders, seltzers, and alternative beverages.

Highlights

I helped find vendors to assist in an upgrade for a brewery down south and trained their staff as well as implemented new software and tracking.

Since starting my consulting company three years ago here are some of the highlights.

Helped a new brewery from initial concept, to ordering and equipment selection, to building and install. I then trained the staff, found their brewmaster, and even helped with their branding by finding their artist and helping name many of the beers. I wrote all of their inaugural recipes as well. And I am still in contact with them whenever they need help.

Helped a homebrewer transition into becoming a professional brewer and increased his efficiency by 12%. Trained his staff for him and taught cell counting.

Helped a brewery take over another brewery and commissioned their new equipment and cross trained the staff.

I helped a second homebrewer go pro and he went on to receive a lot of local recognition in his state. One of my recipes he used was selected by Brew Your Own magazine as a "How to Brew Like a Pro" where they interviewed the owner and cloned my recipe.

Helped train new staff at a brewery which lead to their sales increasing by 300% from the year prior.

I assisted some breweries with recipe development and SOPs over the phone.
