Hi, my name's Jason Matthew.

I am the cofounder and original brewmaster for Artmonster Brewery in Seoul, South Korea.

In 2021 I left during covid. And in 2022 I started my own Brewing Consulting company called Everything is Alchemy LCC. Since then I have been helping breweries all over the world. It has been some of the most rewarding and purpose filled years of my entire life.

While traveling and using all sorts of systems I grew tired of working on poorly designed systems. All too often the system was improperly engineered, lacking in form and function, and unreliable when it came to consistency. And the brewery was often sold things they didn't even need, like a CIP cart, Hop Cannon, and excess parts.

I felt that just because you didn't have the money for a German system didn't mean you shouldn't be able to brew great beer.

This eventually lead to me meeting John at Caleb Machinery. He was a veteran in the fabrication side who was also trying to create his own company. I respected both his tenacity and skill and decided to work with him. Together over two years we worked to create a few stock systems people could buy for a fair price so that anyone could make great beer consistently.

Created a wild yeast project with friends called “The Native Funk Project”
  • We did over 350 spontaneous fermentations and discovered and isolated many new strains of Wild Yeast and Bacteria. Some are stored at White Labs, others at The Ohio State University. In discussion with Fermentis to lease some of the strains.

  • Thanks to The Native Funk project and starting a brewery in Korea I was named one of the ten “People to Watch” for Columbus, Ohio in 2015 in the magazine Columbus Alive.

I rewrote from scratch many of the syllabuses for the Susubori Academy, the only beer school in Korea
While at 49th State we had two IPA's (Sprucesplosion and Solstice) that were in the top 12 IPA's on Untappd

Artmonster won Second Best in Show at the San Diego International Beerfest in 2021

  • I taught the classes: Mashing Chemistry, Water Chemistry, Malting, and Hops for two years.
  • In 2020 Artmonster won 72 medals including a silver medal for Vienna Lager at Euro Beer Star, a gold medal at the Brussels Beer Challenge, Best Midsize Brewery and Best overall beer in Asia at the Asia Beer Championships

  • One of my student's won "Best Beer in Canada" for his double IPA at the all Brewer's Cup in Ottawa.

  • The largest all Asia brewery competition) in 2020 and 2021 for Artmonster, South Korea. And in 2023 with Elias Wicked Ales in the Philippines.

  • Winner of "Champion Small Size Brewery in Asia" in 2024 with Elias Wicked Ales, Quezon City, Philippines.

  • Have learned how to teach brewing in the simplest way so any one can learn.
  • I love teaching, training, and mentoring. I live each day to inspire and feel inspired. And I pass that mindset on to all that I teach.

In early November I left 49th State. I packed my dog and a few belongings into my car and started driving from Alaska, through Canada, to Washington, and down. We had a lot of old friends and family to see. Most I hadn't seen in many years. Some it had been half a lifetime since we had last seen each other face to face. This time off has been really wonderful, but it is time to get back to work. I am excited for what the future holds.
  • In Alaska most of my staff was brand new and arrived from all over the world (Mexico, Korea, Cali, Colorado, Oregon). We had to learn three different systems and water supplies on the fly right before the heart of summer rush and tourist season kicked in. Thanks to incredible hard work and dedication by the team we won 20 medals in one year, which was the most in all of Alaska.
Helped start Luna Kombucha in Columbus, Ohio. I wrote the first high abv recipes and designed the brewery. This brewery now makes tea beer and is called Wild T Brewing.
